The top is 16-gauge type 304 stainless steel with an H-shaped reinforced rib underneath, so it holds its shape under a loaded griddle or charbroiler instead of flexing. Safety hemmed edges run along the sides and back of the top, keeping pots, pans, and small parts from sliding off while you work.
