What is the difference between HERMS and RIMS?

• HERMS - Heat Exchange Recirculating Mash System
• RIMS - Recirculating Infusion Mash System

How does a RIMS brewing system work?

In a Recirculating Infusion Mash System (RIMS) the wort is pumped from the mash tun through an outside heater and returned into the mash tun. The wort is pulled from the bottom of the mash tun and returned to the top of the mash which filters the worth through the grain bed helping to produce a more clear wort. This method also allows brewers to easily increase temperature when necessary.

How does a HERMS brewing system work?

Alternatively, a Heat Exchange Recirculating Mash System (HERMS) is similar, but it varies in the way that the wort is heated once it leaves the mash tun. While a RIMS systems uses direct heat, a HERMS systems enlists the help of the hot water in the hot liquor tank (HLT). In the HERMS system, wort passes through a stainless or copper coil within the HLT and as it passes through, heat is transferred from the coil to the wort thus heating it.

Main benefits of a HERMS brewing system

While RIMS/HERMS brewing systems may have seemed out of reach for many homebrewers years ago, there are now options to get up and running quickly on a HERMS system, which the Brautag provides. Here are some of the key benefits of brewing on a HERMS system:

1. Mash temperature can be precisely controled - with a HERMS system, you no longer have to worry about temperature loss like you would with a static mash tun / mash cooler setup. Additionally, you have the option to step mash - increase the mash temperature through the mash process.
2. Clear (clearer) wort - with a HERMS system, wort is continually recirculated through the grain bed it allows the grainbed to set and start 'self filtering'
3. Repeatability - piggybacking on precise mash temperatures above, being able to dial in a precise mash temp is a big deal as it allows you to produce a repeatable product. Temperature control in brewing is a big deal and once you dial in a recipe that you like, temperature control for mash (and fermentation) become paramount.
